Commonly found in the warm, coastal waters and tropical reefs of Southeast Asia, giant trevally can reach up to 80kg in weight and are prized for their firm, succulent texture and rich, buttery taste. Now, guests can experience this premium ingredient in a choice of four limited-time menu items at Big Fish & Bar, the award-winning seafood restaurant set directly on Hua Hin Beach.
Fans of Thai cuisine can choose to order Southern Yellow Curry with Giant Trevally, a fragrant and flavorful dish featuring young coconut shoots, coconut milk and kaffir lime, served with jasmine rice, or Charcoal-Grilled Giant Trevally accompanied with Thai eggplants stuffed with pork and prawns, nam prik kha paste, lime leaves and chili oil.
The culinary maestros at Big Fish have also crafted two internationally-inspired dishes. Ikan Goreng Kecap embraces the essence of Indonesian cuisine with crispy-fried giant trevally, cooked on the bone with ginger, garlic and sweet soy sauce, then accompanied with jasmine rice, while Pan-Fried Giant Trevally is a French Mediterranean-style creation with cherry tomato sauce, capers, Cailletier olives, new potatoes and pistou, a fresh Provençal herb sauce.
