Spanish Nights Above Bangkok

As daylight fades over On Nut, LUZ Bangkok Tapas Bar takes on a different character. Spread across the 33rd and 34th floors of INNSiDE by Meliá Bangkok Sukhumvit, it is the kind of place where the city naturally becomes part of the evening. Geometric lines inspired by the Rama VIII Bridge shape the interior, while broad glass windows open onto Bangkok as it begins to light up below. Look up and there are glimpses of the rooftop pool’s transparent glass bottom overhead, catching the changing light and adding an unexpected touch to the setting.

The food follows the same spirit. Madrid-born Chef Juan Ignacio García Racionero brings his Spanish culinary roots to the kitchen, but the experience is very much rooted in Bangkok, with local Thai accents finding their way into the evening. The result is a place that feels made for staying a little longer, with tapas to share, drinks in hand and the city stretching out in every direction.

The evening starts naturally at the bar. For something with a little more depth, the Tinto Sour combines bourbon and red wine with sea buckthorn-rooibos honey and egg white, bringing together citrus, tannin and subtle woody notes in a smooth, balanced drink. The Jardin Dorado takes a brighter route, mixing gin, Aomori apple and pear with a velvety basil-yuzu Verdejo espuma. It is fresh, herbal and gently effervescent.

There is just as much thought given to those choosing not to drink alcohol. The Bangkok Tropic is a lively combination of passion fruit, pineapple and raspberry, while the Virgin Sangria takes the familiar Spanish drink in a zero-proof direction, bringing together grape, apple and citrus with a gentle warmth of cinnamon. Both work particularly well as the evening air begins to cool.

Then the food starts arriving, one plate at a time, giving the table plenty of reasons to keep the conversation going. Crispy Croquetas de Jamón give way to rich Iberian ham, while Patatas Bravas Madrid brings light, crisp potato puffs together with a spirited, authentic spicy bravas sauce.

For something fresher, the Dorada Ajoblanco pairs delicate sashimi-style seabream with a silky coconut-almond ajoblanco, lifted by cherry vinegar and olive oil. From there, the flavours become richer. Tacos de Rabo de Toro fill homemade corn tacos with tender braised oxtail, roasted piquillo peppers and smoked Idiazabal cheese, while Steak tartar y Gilda San Sebastián combines Wagyu tenderloin tartare on ciabatta with savoury Spanish pickles and anchovies.

By now, Bangkok is fully illuminated below and the distinction between dinner, drinks and simply enjoying the view begins to disappear. At LUZ, the food is made for sharing, the drinks give the evening its rhythm, and the skyline provides the backdrop. There is nowhere in particular you need to be next. You can simply stay, order another plate, finish your drink and let the lights of Bangkok carry the evening forward.
