Conrad Bangkok unveils the return of its much‑anticipated honey afternoon tea with the launch of “The Conrad Golden Hive Experience” at Diplomat Bar. Inspired by the delicate harmony, craftsmanship and natural rhythm of the beehive, this refined experience celebrates honey harvested from the hotel’s own rooftop apiary, transformed into an elegant expression of flavor and artistry. Available from today to 30 September 2026, the new afternoon tea invites guests to savor a golden journey where sustainability, luxury and culinary creativity meet.

High above the city, Conrad Bangkok’s rooftop apiary quietly sets the tone for this distinctive experience. Here, bees move gracefully from blossom to blossom, crafting a golden harvest guided by instinct, balance and nature’s rhythm. From this elevated sanctuary, inspiration flows seamlessly to the table, as the journey of honey from hive to haute tea unfolds in delicate layers — subtle sweetness, gentle floral notes and a lingering warmth that captures the essence of its origin.

Served on Diplomat Bar’s signature hot‑air‑balloon stand, the afternoon tea is conceived as a sensory journey designed to transport guests to different places around the world. For this edition, the journey ascends to Conrad Bangkok’s own rooftop apiary, inviting diners to explore the hive and see the world from a new perspective. Honey from the rooftop harvest and delicate bee pollen are artfully woven through refined savory and sweet creations, lifted by subtle aromatics and layered textures that evoke a sense of lightness, discovery and imagination.

Each course is meticulously expressed through visual composition and culinary craftsmanship, where colors, forms and textures create moments as striking to the eye as they are memorable on the palate. Shaped by Executive Chef Ryan Dadufalza and his Thai culinary team, the experience reflects a harmonious balance of creativity, precision and respect for ingredients, transforming honey into an elegant narrative of flavor and modern afternoon tea indulgence.

A 12-COURSE TASTING

The Conrad Golden Hive Experience unfolds as an enchanting twelve‑course journey, drifting gracefully from refined savories to layered sweets, with flavors deepening in warmth and texture before settling into a softly indulgent finale. Inspired by honey’s natural versatility, each course explores balance — savory and sweet, light and rich, familiar and unexpected.

Savory Expressions: The experience opens with a series of elegant savory creations where honey lends subtle nuance rather than sweetness. Highlights include Honey‑Cured Gravlax, delicately balanced with citrus and dill atop a blini with saffron cream cheese and salmon roe, and a refined Deviled Egg Sandwich featuring silken onsen yolk cream, shiso flower and a gentle floral touch of bee pollen. Earthy depth follows in a Mushroom Parfait of locally sourced mushrooms with honey‑marinated shiitake and pickled shallots, while comfort arrives in the Conrad Fried Chicken, crisp and golden beneath a soft brioche roll with honey mustard.

Mediterranean notes emerge in a Caprese Tart of stracciatella, pecorino, basil pesto and aged balsamic balanced with honey, before concluding the savory chapter with Caviar and Scallop Tartare, layered with black truffle, green apple, fromage blanc and a delicate accent of honey.

Sweet Reflections: The journey transitions seamlessly into sweets, where honey takes center stage in varying expressions and textures. Delicate highlights include Cannoli filled with light ricotta cream and citrus notes finished with bee pollen, and a comforting Honey Toast layered with vanilla diplomat cream and orange marmalade. A nostalgic Thai interlude appears with Patongo, crisp and airy, served with honey and condensed milk, alongside Luk Chub reimagined with Nam Dok Mai mango and brown butter sablé.

The finale builds in complexity with a layered Honey Mousse of joconde sponge, orange honey jelly, cardamom‑infused mousse, chocolate ganache, honeycomb crunch, and bright yuzu pearls, followed by Honey Woon Krob, pairing honey‑lemon gel with Kad Kokoa 70% Chiang Mai chocolate for clarity and depth in contrast.

The experience concludes with warm Plain and Honey Jackfruit Scones, served with vanilla Chantilly and passion fruit jam — a final, lingering note that captures the warmth and elegance of the hive.

The Conrad Golden Hive Experience is complemented by a curated selection of premium Dilmah teas, paired to enhance the progression of flavors throughout the twelve‑course journey. Priced at THB 1,500++ per set (THB 1,765.50 net) for two guests, the afternoon tea is available daily from 12 pm to 5:30 pm at Diplomat Bar and offers a refined pairing of craftsmanship, flavor and elevated tea culture.

Cocktails (THB 460++ per glass) include The Toasted Bee, a luxurious blend of Grey Goose vodka, Frangelico, honey syrup and lime, elegantly finished with honeycomb and a touch of gold leaf, and The Honeyed Countess, where Bombay gin and vermouth rosso meet honey and lime, softened with egg white for a smooth, rounded texture.

For a lighter expression, Mocktails (THB 250++ per glass) offer equally thoughtful compositions.
