Chef Ian Kittichai Welcomes Back One-Michelin-Starred Chef Nicolas Isnard at Khum Hom for Another Four Hands Culinary Journey This November
Khum Hom at Mövenpick BDMS Wellness Resort Bangkok welcomes back One-Michelin-Starred French chef Nicolas Isnard for the final Four Hands Culinary Journey of 2026, taking place from 19 to 21 November. Chef Nicolas Isnard returns to Khum Hom to reunite with Chef Ian Kittichai, bringing their two culinary perspectives back to the same table for three exceptional evenings.
The menu unfolds as a dialogue between the two chefs over a nine-course menu at THB 5,600++ per person. A seven-course menu is also available for guests at THB 5,000++ per person. Each menu is completed with a wine pairing of six outstanding wines at THB 3,500++ per person.
The nine-course Journey opens with Chef Nicolas’s amuse-bouche, a Surat Thani Oyster; served with avocado and pineapple, before Chef Ian answers with his own amuse-bouche, a Kanom Pada, or fried ring-shaped local pastry with scallop and shredded coconut filling. Then, Chef Nicolas presents a Hamachi Cucumber Rose; served with Sturia caviar and passion fruit sauce, met in turn by Chef Ian’s Yum Goong Sod, or spicy fresh Andaman shrimp salad with young tamarind leaves and Phuket pineapple.
To transition from the starter to the main, Chef Nicolas revisits his signature Onion Soup with a twist he is saving for guests to discover on the night itself. The mains open with Chef Ian’s Gaeng Pla Style Muslim Tai, or southern Muslim-style fish curry with red mullet, torch ginger and okra, followed by Chef Nicolas’s Beef Fillet; served with kumquat, nigiri bonbon and black garlic gel. Ahead of dessert, Chef Ian offers a Noina Kati, or custard apple in sweet coconut milk ice cream, before the evening draws to a close with his Kanom Maung Phet; a tribute to Phetchaburi’s dessert traditions, with toddy palm cake and toddy palm in coconut milk, served with coconut sorbet.
Chef Nicolas Isnard is the Executive Chef and co-owner of L’Auberge de la Charme in Prenois, near Dijon, which earned a Michelin star within a year of his arrival in 2008. Raised in southern France, he discovered cooking alongside his Italian grandmother. His French-Mediterranean approach combines respect for ingredients with techniques refined through experience in Michelin-starred kitchens. As he returns to Khum Hom for the second time, Chef Nicolas shared: “Asia, and Thailand in particular, holds a special place in my culinary journey. There is so much room to play with Thai ingredients, and it is an absolute pleasure to return to Khum Hom, to work again with Chef Ian Kittichai, for whom I have immense professional respect, and to bring another amazing experience to Khum Hom’s guests.”

The Four Hands Culinary Journey runs nightly from 19 to 21 November 2026 at Khum Hom, with dinner service from 6:00 pm. The nine-course menu is priced at THB 5,600++ per person, and the seven-course menu at THB 5,000++ per person. A wine pairing of six wines is available with either menu at THB 3,500++ per person, and guests may also order wines individually from the wine list. Early reservation is highly recommended.
