Leading this new chapter is Sicilian-born Executive Chef Mario Caramella, whose distinguished 30-year career spans some of the world’s most respected luxury hotels and acclaimed Italian restaurants across Europe, Asia and Australia. Bringing his heritage and philosophy of simple, honest cooking to Hua Hin, Chef Mario celebrates authentic Italian recipes elevated by thoughtfully sourced local ingredients.
The menu reflects the spirit of Italian dining at its finest. Signature experiences include Il Mare Nel Secchio, a generous seafood feast inspired by Southern Italy’s coastal traditions and designed for sharing, alongside the beautifully balanced Risotto All’Onda, a rare Italian technique celebrated for its silky, wave-like texture, and Azure’s signature Tiramisù, bringing every meal to a timeless conclusion.
