Afternoon Tea In Full Bloom At The Authors’ Lounge
A limited-time floral-inspired afternoon tea by Chef Gabriel Le Quang, with each petal-shaped pastry drawing on the theme behind his Meilleur Ouvrier de France 2023 title.
From 18 May to 18 June 2026, The Authors’ Lounge at Mandarin Oriental, Bangkok presents a limited-time afternoon tea by Chef Gabriel Le Quang, recipient of the Meilleur Ouvrier de France (MOF) 2023 as a part of Masters of the 150th: An Epicurean Journey, celebrating the 150th anniversary of Mandarin Oriental, Bangkok. In a setting long associated with the ritual of afternoon tea, the collection draws from floral artistry, a theme at the centre of his award-winning work.
Presented as a composition of petals, each pastry is conceived as an individual expression of flavour and texture, coming together to form a complete ‘flower’ on the table. The work reflects Chef Gabriel’s creativity, discipline, restraint and intent.
The pastry selection features a series of distinct creations. The Exotic Coconut Cheesecake Petal layers sablé with baked New York cheesecake, tropical marmalade and a light mousse. The Chocolate Praline Baba Petal combines chocolate baba sponge, hazelnut praline and whipped ganache with a crisp finish. The Citrus Calisson Petal pairs almond with mandarin, while the Date & Cherry Petal combines spiced sponge with cherry compote. The Raspberry, Coconut & Wasabi Petal adds contrast, balancing sweetness with a gentle note of heat.
Warm traditional scones are also served with seasonal house-made jams and a choice of Devonshire clotted cream, mascarpone or butter. The savoury selection introduces a change of pace through a series of tea sandwiches, from Boston lobster with tartare sauce on pumpernickel bread to Smoked salmon, horseradish and cucumber, alongside Pastrami with potatoes and sour cream, Coronation chicken with black olives, and Celery heart with egg salad on curry bread.
Chef Gabriel’s journey to the MOF title reflects years of training and mentorship. He began in Paris, with early experience at Carré des Feuillants, followed by training with Stéphane Glacier and Arnaud Larher. His time at Valrhona, The Peninsula Paris and Hôtel du Cap-Eden-Roc further shaped his craft. After years of preparation, he was awarded the Meilleur Ouvrier de France in 2023, recognising technical mastery and commitment to the craft.
At The Authors’ Lounge, this is expressed through an afternoon tea shaped by form, flavour and balance, in keeping with the setting’s long-standing tradition.
The Afternoon Tea by Chef Gabriel Le Quang is available daily from 18 May to 18 June 2026, priced at THB 1,980++ per person, or THB 2,680++ per person including a glass of Champagne. Afternoon tea is served from 12pm to 6pm.
