InterContinental Hua Hin Resort presents Smoke & Memories: A Culinary Conversation, an exclusive 4-Hands Chef’s Table dinner that unites two of Thailand’s most passionate culinary storytellers — Chef Pantit “Et” Jindajitawat of Jaras Hua Hin and Chef Chatchawan “Bank” Varahajeerakul of Le Du Kaan, Bangkok — for an unforgettable evening of intensity, artistry, and memory.

Taking place on Saturday, 13th December 2025, the dinner draws inspiration from the fire, forest, and sea — translating the essence of Thailand’s terroir into a tasting journey that moves beyond everyday comfort and toward the poetic depth of regional Thai flavours.

Personally selected by Chef Thitid “Ton” Tassanakajohn, Thailand’s celebrated two-Michelin-starred chef and the only Thai chef with two restaurants on the World’s 50 Best Restaurants list, Chef Bank brings to Hua Hin his creative rhythm and contemporary edge from Bangkok’s rooftop fine-dining scene. Together with Chef Et, whose refined interpretation of Thai cuisine defines Jaras Hua Hin’s identity, the duo crafts a culinary dialogue of contrasts, smoky and subtle, spicy and sweet, nostalgic and new.

A Journey Through Smoke and Region

Smoke & Memories celebrates intense regional flavors and locally sourced Thai ingredients, weaving together bold notes from the North’s mountains, South’s spice, and Northeast’s smoke and tang — each dish transformed with modern craftsmanship and an artistic eye.

Guests will savor an evolving menu that reveals a deeper side of Thai cuisine:

  • Isan Smoke – Char-grilled organic pork cheek with roasted eggplant chili relish, capturing the rustic charm of Northeastern cooking

  • The Anthill – Wild ant egg custard and Hua Hin caviar in a deeply smoked tom khlong broth, a memory of the forest and fire

  • Fire & Fruit – Smoked duck breast with Thai foie gras and tamarind-red wine jus, balancing flame and sweetness

  • Broth of Memories – Hua Hin grouper in tom som broth with caramelized shallot and lemongrass oil, reminiscent of coastal kitchens

  • Wild Currents – 48-hour Thai Tajima short ribs infused with fiery red curry and forest vegetables — the taste of the wild refined to perfection

  • A Coconut & Smoke Memory – Smoked coconut, taro mousse, and caramel palm sugar crumble, echoing the warmth of Thai childhood treats reborn with elegance

Every course is a story — a reinterpretation of Thailand’s diverse landscapes, where the everyday essence of Thai cooking transforms into a refined art form.

To complete the journey, each course is paired with a thoughtfully crafted beverage designed to mirror the soul of Thai cuisine — bold, fragrant, and deeply layered. The beverage curation brings harmony to the menu’s intensity, balancing spice with citrus, smoke with floral notes, and richness with refreshing clarity. Guests will discover how the bright tang of Citrus Groove uplifts coastal flavours, the Jasmine Breeze softens northern spice, and the final Chocolate-Covered Roses lingers with delicate sweetness and warmth. Together, these pairings awaken the palate and reveal the true essence of Thai taste — a dance of spice, aroma, and emotion in every sip.
