Sartoria by Paulo Airaudo, the modern Italian MICHELIN Selected dining destination perched on the 56th floor of EA Rooftop at The Empire in the heart of Bangkok, joins hands with Kaviari and Louis Roederer to present an exclusive Caviar & Champagne Dinner—a refined celebration of craftsmanship and exceptional produce, bringing together three distinguished names in gastronomy for one remarkable evening.
In collaboration with Kaviari, the Parisian caviar maison trusted by many Michelin-starred restaurants worldwide, and Louis Roederer, the esteemed Champagne house renowned for its Cristal cuvées, the five-course experience at Sartoria by Paulo Airaudo begins with a welcoming glass of Louis Roederer Collection 245, accompanied by a tasting of three exceptional Kaviari caviars—Baeri, Oscietra and Kristal—each presented individually to reveal its distinctive salinity, texture and length on the palate.
The menu unfolds with Tuna & Caviar, defined by clarity and precision and elevated by the depth and structure of Louis Roederer Cristal Brut 2016. The journey continues with Scallop with Champagne sauce and leek, elegantly paired with Louis Roederer Blanc de Blancs 2017 for a vibrant and refined expression. The experience is further enhanced by Chitarra with Carabineros, a poised display of Italian finesse that balances natural sweetness, savory depth and bright citrus notes.
The highlight of the evening presents Blue Lobster with Kristal caviar, unfolding rich, complex flavors with lingering notes of fresh almond and delicate honeyed nuances, exquisitely paired with Louis Roederer Cristal Rosé 2014 for a bold yet elegant expression of depth and refinement. The experience concludes with the dessert Rum and Banana complemented by Oscietra caviar, matched with Louis Roederer Rosé Vintage 2017, delivering a captivating balance of sweetness and salinity for a memorable finale.
