ROSEWOOD SÃO PAULO’S TARAZ IGNITES THE SHACK AT ROSEWOOD PHUKET FOR A FOGO & FRESCOR FESTIVE POP-UP

This festive season, the bold flavors of South America are landing on the shores of the Andaman Sea. Rosewood Phuket is bringing Taraz, the celebrated restaurant from Rosewood São Paulo , to its laid-back beachfront eatery, The Shack, for an 11-day pop-up from December 18 to 28, 2025.

The collaboration will transform The Shack’s rustic, seaside setting into a vibrant South American outpost.
The menu is a study in contrasts, highlighting the bright, raw, and citrus-forward flavors of Peruvian ceviche while celebrating the rich, smoky, and wood-fired tastes of Brazilian barbecue. It’s a dining event that captures the essence of two distinct culinary cultures, designed for sharing under the stars.

The menu features dishes straight from the heart of South America. Guests can start with a zesty Ceviche Clássico or the iconic Pão de Queijo com Costella na Brasa—Brazilian cheese bread filled with smoked ribs. Main courses include a show-stopping Peixe Assado, grilled fish served with a shrimp and mussel “moqueca” stew, and a succulent Pancetta de Porco Preto, black pork belly.

The cocktail list is just as spirited, featuring creative concoctions like the Pacha Mama (Tanqueray 10, passion fruit, spices) and a classic Rio de Janeiro “Caipirinha” made with cachaça, lime, lemon, and tangerine.

“At Taraz, our food is about community and big, honest flavors from the grill,” says Chef Gabriela Franchesi of Rosewood São Paulo. “We can’t wait to fire up the charcoal at The Shack and introduce guests in Phuket to our style of cooking—from classic ceviche to our smoked ribs with pão de queijo. It’s food meant to be shared and enjoyed.”

The Taraz pop-up at The Shack will be available for dinner from December 18 to 28, 2024. Reservations are highly recommended.

To Start (Crudos e con las Manos)

  • CEVICHE CLÁSSICO: Fresh fish, tucupi, red onion, crispy corn, coriander, chili, roasted orange sweet potato, sweet potato chips

  • EMPANADAS: Wagyu, green olives, paprika, spring onion

  • PÃO DE QUEIJO COM COSTELLA NA BRASA: Brazilian cheese bread, smoked ribs, gherkin pickles, red onion, green salsa, coriander

Mains (Assados)

  • PEIXE ASSADO: Grilled fish with a shrimp and mussel “moqueca” stew, rice and breadcrumbs “farofa”

  • PANCETTA DE PORCO PRETO: Black pork belly, tucupi, corn cream, marinated tomatoes, Panc’s salad

  • NOSSA “CAUSA”: Orange sweet potato mille-feuille, aioli, butter, shrimp, chayote vinaigrette

  • BRIGADEIRO DE PANELA: Traditional Brazilian chocolate dessert, cashew paçoca, caramelized cashew, vanilla ice cream

  • CHURROS: Served with smoked condensed milk, dulce de leche, or chocolate
