Nila unveils its Second Chapter “Flavours from Every Corner of India”

Nila, the acclaimed Indian restaurant at Amari Bangkok, enters its second chapter with a new
menu titled “Flavours from Every Corner of India.”

Over a year has passed since the house in Goan first opened its doors, when the coast’s
artifacts, infused with salt, smoke, and sun, were first laid upon the table. Yet the collector’s
trove was never limited to the Coastal.

Over time, more recipes and memories were gathered. Spices carried along ancient routes,
dishes passed down through royal courts, desert camps, forest kitchens, and festive streets.
Each one quietly preserved, waiting to be shared.

Now, Nila reveals the next part of its story: a broader culinary map, defined by warmth, ritual,
memory, and movement. The second chapter expands the menu to showcase treasures from
across India, favourite dishes and beloved flavours from every region, brought together with the
same reverence that shaped Nila’s beginnings.

Signature dishes include Peri Peri Jheenga (grilled prawn, peri-peri spice, lemon ghee), Mochar

Chop (Bengali banana-blossom croquettes, Anjeer Kofta (fig & paneer dumplings, light saffron-
makhani) and many more. Each is rooted in the story of where it came from, how it was made,

and why it matters. Recipes are chosen not by trend, but by significance by their ability to carry
