Chef Charles Coulombeau – La Maison dans le Parc, Nancy, France (1 Michelin Star)
Chef Charles Coulombeau embodies a new generation of French chefs: modern, precise, and deeply respectful of terroir. His career took shape in some of the world’s most celebrated kitchens, where he absorbed the techniques and philosophies of masters. Alongside his partner Roxane, who directs front-of-house, Charles has established La Maison dans le Parc in Nancy as a beacon of gastronomic refinement.
Their restaurant, set within a historic mansion overlooking a tranquil park, epitomises elegance and calm. Here, Charles crafts tasting menus that celebrate the purity of seasonal ingredients, elevated by touches of citrus, Japanese influence, and artistic plating. His food is characterised by restraint and clarity: nothing is superfluous, every detail has a purpose.
Over the past decade, his rising reputation has been confirmed by multiple awards. He became a winner of the prestigious Taittinger Culinary Grand Prix International, recognised for his mastery and creativity on the global stage. He has also been celebrated in the UK, receiving the Acorn Award for emerging leaders under 30, before returning to France to lead La Maison dans le Parc. Shortly after, the restaurant was awarded its first Michelin star, along with recognition for outstanding service.
Charles’s philosophy is simple yet profound: each ingredient deserves respect, and every dish must carry meaning. Chef Enrique Casarrubias – Oxte, Paris, France (1 Michelin Star)
Chef Enrique Casarrubias’s story is one of determination, and creative vision. Raised in Mexico City in a family of butchers, he grew up surrounded by the rhythms of food and the respect for raw ingredients. Drawn to cooking from an early age, he later moved to Paris with the ambition of training and returning to Mexico. Instead, Paris became his home, and over time he forged a culinary identity that merges the warmth of Mexican tradition with the refinement of French haute cuisine.
Enrique trained in the kitchens of Paris’s most iconic hotels and restaurants, including Le Crillon and Le Cinq at the Four Seasons George V. His most formative influence was Chef Akrame Benallal, under whom Enrique worked both in Paris and abroad, gaining the confidence to develop his own voice. The vision matured into Oxte, a restaurant he opened with his wife, Montserrat Estrada, also a chef with experience in fine dining. Located near the Arc de Triomphe, Oxte quickly drew acclaim for its bold marriage of cultures.
His cuisine is not a simple fusion but a dialogue between memory and technique. Childhood flavors of spice, fire, and herbs are reimagined through the lens of French training.
