Madison Steak Avenue unveils its latest Signature Series creation, Lobster Thermidor à la Manhattan, a refined expression of coastal luxury and modern steakhouse craftsmanship. The dish features wild-caught Maine lobster, with an optional upgrade to premium Brittany blue lobster for an elevated dining experience.
Maine lobster (Homarus americanus) is prized for its naturally sweet, clean flavor and tender claw meat, offering a refined yet approachable profile that appeals to a broad range of diners. By contrast, blue lobster (Homarus gammarus) is distinguished by its firmer, more compact texture and a deeper, more complex flavor with pronounced oceanic and mineral notes. Together, these two selections showcase the full range of premium lobster experiences, from delicate sweetness to bold, ocean-forward intensity.
It is finished with a sophisticated Thermidor sauce crafted with mustard and rye whiskey, enriched with cheddar, and a silky “Manhattan Cocktail” lobster sauce.
