Dining Experience
Lumi’s setting reflects the same harmony. Striking interior design elements with subtle textures are highlighted by a rhythmic composition of light features. The concept recalls the city fabric, evincing a strong sense of place. Indeed, from the plate and beyond, a captivating taste of place emerges everywhere at Lumi.



It’s also an evolving concept. Guests of upcoming Lumi destinations, including at AMANOR Stay Jozankei in Japan, can expect similar site-specific design components at each dining space.
Cross-Cultural Cuisine
Diners can begin with, say, Andaman Tuna Tartare combining freshly caught local tuna in an Italian-inspired preparation, the dish deftly balancing avocado, quinoa lemon dressing, pickled shallots and capers. For pasta course, Chef Prince Signature Pasta elevates classic Italian techniques with local seafood and features spaghetti with crab meat, tartar sauce, lumpfish caviar and a delicate tomato butter sauce. Among mains choices is Chef’s Signature Braised Beef Short Ribs masterfully enhanced by berry-infused red wine sauce and served alongside creamy polenta and porcini mushrooms. Also not to be missed is one of the menu’s “Thai Thai” selections such as Kao Soi 9 Prawns, a crispy egg noodle served in rich kao soi broth with braised pulled prawns and ricotta ravioli. Of several ways to conclude the dining experience at Lumi is with interpretation of a classic Italian dessert, Tiramisu, here accompanied by imported premium amarena cherry gelato.



A wide-ranging drinks program complements the cuisine and features favorite Italian wines in addition to innovative cocktails incorporating local Thai ingredients.
Illuminating Italian Cuisine with Visionary Craftsmanship
The culinary vision of Lumi is brought to light under leadership of Thanongsak “Prince” Maneegard, whose creativity and passion have been essential characteristics since the beginning of his career. A graduate of Perth’s prestigious Empyrean Education Culinary Institute in Australia, Chef Prince spent nearly a decade honing his craft at the multi-award-winning Perth restaurants Riverside and Red Opium. Now, returning home to Chiang Mai, he brings this wealth of experience to lead Lumi’s culinary team. His expertise and vision define the Lumi experience through innovative creations that delight the senses.


The service experience is orchestrated by Kritchanut “Bomb” Jakruwan, a distinguished figure in Chiang Mai’s food and beverage scene since 2005. His extensive background includes positions at prestigious five-star properties in Thailand including The Chedi and Dhara Dhevi, as well as experience with luxury cruise lines in England. Together with his dedicated team, Bomb ensures each guest enjoys an exceptional dining experience that matches the caliber of Lumi’s cuisine.
