Favola Chiang Rai has introduced a new chapter in Italian dining experiences. On Saturday, December 6, 2025, the riverside restaurant celebrated for blending authentic Italian charm with contemporary perspectives hosted an exclusive launch event for its meticulously crafted new menu. Set against the romantic backdrop of the Kok River, the event welcomed local media and lifestyle influencers to experience this reimagined culinary journey in a warm and intimate atmosphere.
The new menu is the result of a creative collaboration between Chef Marco Cammarata, a seasoned chef with extensive experience in contemporary Italian cuisine from Royal Orchid Sheraton Riverside Hotel Bangkok, and Chef Maprang (Pattama Sawasdee), Sous Chef at Le Méridien Chiang Rai Resort. Chef Maprang is entrusted with upholding the culinary standards and presenting this new selection to guests daily.
Chef Marco provided consultation and menu design, curating culinary concepts from Italy’s diverse regions from the North’s focus on rich cheeses and creams, to the Central region’s standout homemade pastas, down to the South’s robust seafood and tomato flavours. These concepts have been passed to Chef Maprang for long-term stewardship, ensuring the contemporary Italian taste remains a consistent signature of Favola Chiang Rai.
The Aesthetics of Italy: A Journey Through Taste
Chef Marco and Chef Maprang invite guests to experience highlight dishes crafted by weaving together stories of premium ingredients with traditional Italian cooking techniques.

Handcrafted pasta takes centre stage in the Paccheri al Sugo di Spigola e Bottarga, where tube-shaped paccheri is enveloped in a delicate white snapper ragù. A touch of bottarga lends depth reminiscent of Italy’s coastal landscapes.
For the mains, guests may savour Gamberi al Lardo, featuring tiger prawns wrapped in Tuscan lardo presented on a bed of tender cannellini bean ragout—balanced by herb oil and balsamic reduction. Alternatively, Medaglioni di Vitello al Parmigiano showcases grilled veal medallions complemented by crispy Parma ham, sautéed spinach and a luscious Parmesan sauce.
The journey concludes with Latte in Piedi al Caramello, a smooth Italian-style caramel custard served with honeycomb—a delicate tribute to simplicity and refinement.
