Discover the Essence of Citrus Afternoon Tea at Park Hyatt Bangkok

Park Hyatt Bangkok proudly introduces the Essence of Citrus Afternoon Tea, a culinary journey celebrating the bold and refreshing spirit of citrus fruits from Asia and beyond. This afternoon tea, carefully curated by the newly appointed Pastry Chef, Fabrizio Zarate, showcases Zarate’s vibrant family recipes with globally celebrated citrus flavors. The menu captures the curiosity of citrus fruits, highlighting their versatility through innovative desserts, from creamy namelakas to citrus smoked duck, serving the countless ways these fruits can be transformed.

The experience begins with the Citrus Welcome Drink, a refreshing prelude to the afternoon tea, inspired by something the Zarate family used to serve to their house guests.

The sweets selection begins with the Yuzu Namelaka, featuring Japan’s vibrant yuzu paired with Thai pomelo and a delicate Italian meringue. The Pink Grapefruit dessert, inspired by Vietnam, combines zesty pink grapefruit with Timut pepper and a crisp olive oil biscuit, creating a bold interplay of flavors and textures. The Sudachi creation from South Korea blends sudachi confit and citrus ganache with a hazelnut dacquoise. The Kalamansi Basque Cheesecake, hailing from the Philippines, delivers a tropical, creamy delight with a caramelized finish.

To share, the Citrus Pavlova is a light and airy masterpiece, combining Zarate’s deep knowledge of global desserts, fusing bergamot and Tahitian lime inspired by Thailand and South China and the original pavlova recipe from Australia.

The savory selection offers a flavorful balance from old family recipes, featuring Smoked Duck with kumquat and mandarin gel for a smoky-citrus harmony, Hokkaido Scallops with coconut-herb gel and Australian finger lime for a fresh, oceanic zing, Zucchini, Caramelized Grapefruit & Whipped Feta, and Foie Gras Terrine with yuzu preserves and raspberry for a luxurious contrast.

The experience pairs perfectly with our signature Tea Cake Trolley, where guests can enjoy an array of delights, including the Persian Lime Bonbon, Earl Grey Brioche, Matcha Tea Madeleines, and the Vanilla and Pecan Financier. This Tea Cake Trolley is complemented by a selection of tea and perfectly brewed coffee.
