CHEF RILEY SANDERS MAKES A SURPRISE RETURN FOR AN EXCLUSIVE MENU COLLABORATION WITH MS.JIGGER AT KIMPTON MAA-LAI BANGKOK FOR SIX WEEKS

Kimpton Maa-Lai Bangkok is delighted to unveil an exclusive menu collaboration between Ms.Jigger, its award-winning restaurant, and Chef Riley Sanders, the creative force behind the now-closed Canvas, a former One MICHELIN Star restaurant that helped shape Bangkok’s modern fine dining scene. This marks Chef Riley’s first public appearance in the kitchen since Canvas—his groundbreaking One MICHELIN Star restaurant known for its abstract, ever-evolving cuisine that featured local Thai ingredients presented as curated expressions of flavour, form, and emotion, blurring the line between art and gastronomy through storytelling, customized ceramics, and modern techniques.

This marks Chef Riley’s first public appearance in the kitchen since Canvas closed its doors, an exciting comeback for fans and a rare opportunity for newcomers to savour his signature storytelling through food. Available from 1 August to 14 September 2025, this limited-time menu will be served exclusively at Ms.Jigger.

Home to the acclaimed Avant, a One MICHELIN Star restaurant, and the beloved Ms.Jigger, the hotel now continues its tradition of culinary innovation by hosting one of Thailand’s most celebrated chefs in a collaboration that merges flavour, emotion, and artistry.

Three Dishes. Three Emotions. One Extraordinary Experience.

Chef Riley’s collaborative menu is titled “Expressions”, with each dish crafted to evoke distinct emotions: Playfulness, Intrigue, and Satisfaction. As with his work at Canvas, the focus remains on locally-sourced, seasonal Thai ingredients, brought to life with modern creativity.

Playfulness
Sea bass, beetroot, pomelo, red onion, coconut

Intrigue
Bone marrow, brassicas, radish, sherry
A striking composition of freshness, vegetal spice, and deep umami—layered with mystery and surprise.

Satisfaction

A soulful, rich plate that balances comfort with complexity, leaving guests deeply content.

The special three-course menu is available for lunch and dinner exclusively at Ms.Jigger at THB 1,490++ per person, with an optional wine pairing, curated by Bangkok-based sommelier Alison Christ, at THB 1,190++.

A Culinary Homecoming

Having cooked alongside celebrated names like James Beard Award-winners Tyson Cole and Paul Qui, and trained under 3-MICHELIN Star Chef Laurent Gras, Chef Riley Sanders brings a wealth of international experience. Most recently, he honed his skills as the head chef aboard a private superyacht, refining his perspective on global cuisines.

His return to Bangkok, where he first fell in love with Thai culture and ingredients in 2013, is more than a homecoming; it’s a continuation of a journey that began at bustling street markets and culminated in his leadership at one of the city’s most progressive restaurants.

This collaboration is the first in a series of special guest chef events at Ms.Jigger, part of Kimpton Maa-Lai Bangkok’s vision to offer guests and locals access to MICHELIN experiences right in the heart of Bangkok.
