From July 1 to August 31, The Ritz-Carlton, Hong Kong has the honor to present Meilleur Ouvrier de France (Best Artisan of France Pastry Chef) and World Pastry Champion Franck Michel, who has crafted a summer afternoon tea set featuring seasonal tropical fruits exclusively for Café 103.

Franck Michel’s career started at Mr Saffroy in the Lorraine region of France. After working as a pastry chef for several establishments in the eastern France and later in Paris, he became Head Pastry Chef at Relais Dessert International in Luxembourg before joining Flo Prestige in Paris, where he developed his very own patisserie range. Chef Michel received the title of “Meilleur Ouvrier de France (Best Artisan of France Pastry Chef)” in the patisserie category in 2004 and World Champion for pâtisserie in 2006. Since 2007, Chef Michel has been working as a pastry consultant not only in France but also in other parts of the world, and has recently coached the French and Spanish national teams who won the World Pastry Cup in 2009 and 2011. This time, Chef Michel got his creative juice flowing around the theme of tropical fruits, presenting a range of delightful desserts for guests of Café 103.

The soft and airy pastry shell of Passion Choux is filled with silky-smooth vanilla cream and tropical fruit compote highlighting the cleverly blended sweetness of pineapple, mango, banana and lime. The choux is then garnished with mango and passion fruit coulis on top to offer a pleasing abundance of textures.

Heméra Frame is beautifully layered with buttery shortbread, moist almond lemon dacquoise, lemon confit, strawberry coulis, a generous spread of refreshing white chocolate mousse and olive oil jelly, pampering the taste buds with a soothing balance of flavors.

Almond Apricot Dome promises to be a pleasant surprise for every sweet tooth. The cake body is composed of a rich creamy almond mousse covered with crispy white chocolate coating. It is adorned with dome-shaped apricot compote, presenting an adorable confectionery perfect for a mid-day fix.

Sawayaka Verrine is a delectable symphony of summery tastes. A delicate dessert glass houses a tasty raspberry and melon soup. On top of it is a Grand Marnier-infused parfait in a chocolate dome shell to complete the dessert with tangy sweet notes of bitter orange.

Lili Melting Heart is a half-sphere chocolate filled with tropical fruit caramel featuring a mix of passion fruit, mango, coconut and guava puree. The dessert is beautifully arranged on flower-shaped sweet dough to melt any heart.
